Recipe: Sweet Cinnamon Brown Rice Breakfast Porridge

A typical American diet thrives on breakfasts of cereal with milk, waffles, egg & cheese sandwiches, bagels with cream cheese, and toast with jam.  When you eliminate gluten, dairy, and sugar from your diet, breakfast can be the most challenging meal to keep healthy, tasty, and interesting!

This rice bowl is a nice departure in taste and texture from my usual oatmeal (not to mention, it tastes like rice pudding – yum!).  Brown rice can take a while to cook and I often will make a huge batch of brown rice in my rice cooker on Sunday night so we have enough to eat throughout the week.

Ingredients:
1 cup cooked brown rice
1/4 cup vanilla soy milk (or your favorite milk substitute)
1/2 teaspoon cinnamon
toppings of your choice (I like 1/4 cup of fresh blueberries,1 teaspoon of raw honey, and a handful of walnuts).

Directions:
Zap the rice and milk in the microwave for 2 minutes or until hot.  Add cinnamon and toppings and enjoy.
