I got some beets in my CSA last night and holy crap they are huge:
I also got some beautiful cherries:
But back to the beets. My plan is to cook some of them and juice the rest. Beets have a natural sweetness to them which makes for a wonderful tasting juice. The greens are a fantastic source of vitamin C and iron and can serve as the green veggies in the juice. Add a little apple and lemon, and you have a delicious green morning juice. Even my husband liked it (as surprised as he was).
2 large beets (including greens)
1 small apple
1 inch piece of ginger
1 tablespoon hemp powder
Juice the produce alternating between fruits and vegetables. Whisk in hemp powder and enjoy!
