Recipe: Raw Tomato Basil & Oregano Pasta Sauce

This sauce takes less than 15 minutes to make, it’s delicious, and inexpensive. And the fresh herbs add a restaurant quality flavor to any dish.

Ingredients
4 vine ripened tomatoes or 6 plum tomatoes seeded and diced
12 large basil leaves, chopped
1 sprig oregano leaves, chopped
1 clove garlic, grated
1/4 teaspoon red pepper flakes
1/4 teaspoon pepper
1/2 teaspoon salt
1/4 cup extra virgin olive oil
1 box of your favorite (gluten-free or whole grain) pasta

Directions:
Add the tomatoes, garlic, red pepper flakes, salt, pepper, olive oil, and about 3/4 of the herbs (the rest will be used for garnish).  Allow the mixture to stand at room temperature for  at least 10 minutes to let the flavors meld and the tomatoes marinate in their own juices.  In The meantime, prepare the pasta according to package directions.  When ready, toss the hot pasta with the sauce.  Garnish with the remaining herbs and serve immediately.
