Recipe: Raw Hazelnut Brownie Bites

raw brownie bites I have a salt tooth – my great loves are olives, capers, and smoked fish.  But once in a while, I like a small sweet treat.  These no bake brownie bites are simple and delicious, and a great way to satisfy a sweet tooth without reaching for a candy bar.  They have a texture that’s a cross between a brownie and a Tootsie Roll – with just a hint of hazelnut flavor that’s reminiscent of Nutella.

Side note on Nutella:  how are they allowed to market it as “ hazelnut spread with a hint of cocoa ,”  when the sugar content pretty much makes it candy bar in a jar.  Don’t get me wrong, it’s completely delicious and I had it for (cheap) breakfast everyday when I was 18 and studying in France – but let’s call it like it is.  Vent over.  Onwards with the recipe!

Ingredients:
3/4 cup raw hazelnuts
1/4 cup raw honey (vegans can use agave nectar)
2/3 cup cacao powder
1 tablespoon coconut oil

Directions:
Add the hazelnuts to a food processor and process for 10-15 minutes until they form a nut butter (stop the processor and scrape the side of the processor as needed).  After the hazenuts are completely smooth, add the rest of the ingredients and process for another 5 minutes until the mixture forms a dough.

Roll the dough into a large ball and flatten onto a cutting board.  Cut the dough into small squares (about 1/4 inch to 1/2 inch in length and width) and arrange them on a baking sheet lined with parchment paper.  Freeze the bites for at least 30 minutes.  Defrost for 2 minutes before serving.

Makes approximately 30-40 bites
