I grew up on PB&J, it’s a comfort food that makes me feel nostalgic and comforted at the same time. Classic Jam and preserves recipes call for a horrifying amount of sugar. Plus the fruit is heated to an extremely high temperature, essentially pasteurizing all of the nutrients out.
This recipe is simple and delicious. Any type of frozen berry can be used. The chia seeds give it some texture (not unlike strawberry seeds), and the raw honey adds sweetness (along with all it’s healing enzymes and powers ).
And who says I can’t have a healthy version of PB&J? This jam, along with some almond butter on gluten-free bread ? Yum.
1 tablespoon chia seeds
1 tablespoon raw honey (add more if you prefer it sweeter)
1 cup frozen berries
1 tablespoon filtered water
Whisk the raw honey into water until a syrup is formed. Mix the chia seeds, berries, and raw honey mixture together and set it aside at room temperature. Once every 20 minutes or so, stir the mixture together. The liquid from the berries as they defrost will get absorbed by the chia seeds and create thickness. When the berries are completely defrosted, mash them into the mixture and put the jam in the fridge until ready to use.
