Recipe: Raw Beet Turnip & Citrus Salad In An Oregano Honey Mustard Vinaigrette

Raw beets add crunch, color, and sweetness to a winter salad. Raw turnips are like milder radishes. The key is to slice them super thin – I used my mandolin on its thinnest setting. Aren’t they pretty?
This salad is full of bold flavors – salt, sweet, sour, bitter. The mixture of root vegetables, tangy orange and grapefruit, and greens are tasty reminders of winter produce and citrus.
3 beets peeled and thinly sliced
1 bunch turnips peeled and thinly sliced
3 scallions sliced
4 cups mixed greens
2 medium sized oranges, supremed (or peeled and sectioned)
1 small red grapefruit, supremed (or peeled and sectioned) Dressing
1 teaspoon raw honey
1 teaspoon dijon mustard
2 teaspoons finely chopped oregano
2 tablespoons red wine vinegar
1/4 cup extra virgin olive oil
1 dash garlic powder
1/4 teaspoon salt
1/4 teaspoon black pepper
Add the mustard, honey, salt, pepper, vinegar, and garlic powder in a bowl and whisk as you drizzle in the olive oil until the dressing is completely combined. Mix in the oregano. Immediately before serving, toss the salad ingredients with the dressing, Garnish with more oregano if desired.
