Recipe: Pineapple Ginger Green Juice

pineapple green juice It feels amazing to be back in my kitchen after 2 weeks away.  I missed having fresh food and cooking utensils at my disposal.  First things first, I juiced.  Since Steve was in charge of the groceries while I was away – I found lots and lots of fruit in the fridge.  Strawberries, blueberries, oranges, cherries, you name it.  Kid sure loves his berries.

I saw a lone pineapple standing on the counter, and I began to crave sweet pineapple juice  (so yummy on a warm summer night).  The inner core of pineapple is pretty tough to eat – but it’s perfect for juicing!  I love taking pieces of fruits or veggies that I normally don’t use and putting them towards a juice or a soup.  Broccoli stalks, carrot and beet tops, and pineapple cores inevitably make it into my juicer.

Ingredients:
1/2 cucumber
1 broccoli stalk
6 large spinach leaves
4 1 inch spears pineapple  (one of the ones I used was the core)
1 inch ginger
1/2 lemon
1 teaspoon hemp protein powder (optional)

Directions:
Juice all the produce, alternating between fruits and veggies.  Whisk in the protein powder and enjoy!

Serves 1
