Recipe: Mint Chocolate Chip Smoothie (You Won’t Taste The Spinach, I Swear)

Raw cacao nibs are chocolate in its purest form – no processing and no sugar added. The first time I tried them by themselves, I had to spit them out; they are incredibly bitter. But if you add them to sweet things they taste like dessert – and this smoothie is no exception.
I like adding baby spinach to smoothies because it pulverizes really well and the taste is easily masked by other ingredients. Plus the green color makes this smoothie seem all the more minty. Mint chocolate chip was one of my favorite ice cream flavors, and this smoothie is a delicious and guilt free substitute.
4 tablespoons non dairy protein powder (I like hemp powder )
2 cups baby spinach (lightly packed)
10-12 mint leaves
2 teaspoons vanilla extract
2 cups unsweetened almond or soy milk
1-2 tablespoons raw honey (depending how sweet you like it)
2 tablespoons raw cacao nibs
Blend all ingredients (except the cacao nibs) until smooth. Then add the cacao nibs and blend for another 10-15 seconds until they are in tiny pieces.
