Adding a bit of fruit to guacamole may not be traditional but its 100% delicious. I topped some huevos rancheros with this guacamole and my husband cleaned his plate. Then he polished off the rest of the guacamole. Maybe he was just hungry.
This recipe would be delicious with any sweet and tropical fruit such as pineapple, pomegranate, or papaya.
3 ripe avocados
1 ripe mango, diced
1 large shallot, finely chopped
1 clove of garlic, grated
2 tablespoons cilantro, finely chopped
Juice of 1 lime
1 teaspoon salt
1 teaspoon pepper
1/2 teaspoon cumin
1/2 teaspoon cayenne pepper
Add the mango, shallot, garlic, salt, pepper, cumin, cayenne, and cilantro in a bowl and set aside. Mash the avocados with a fork or a potato masher with the lime juice (this prevents them from turning brown). Combine the avocado mixture with the mango mixture and serve immediately.
