I was watching the latest season of top chef last night and one of the contestants said something that is so true about eating a plant-based diet. From a taste perspective, animal products just inherently have so much flavor – but when you are limited to plants, you have to put in that extra bit of effort to make it delicious.
A perfect example is juicing. To make it taste good, sometimes you have to get creative. I love juicing, but sometimes the same old combinations can get tiring. My typical juice usually has greens (the entire point), apple (for sweetness), lemon (to cut through the greens), and cucumber (a nice watery base). It’s fun sometimes to switch it up and have something totally different. This juice tastes like a licorice flavored dessert – in the best way possible.
1/2 bulb fennel (including the frawns)
1 broccoli stalk (optional)
1 granny smith apple
1 cucumber (peeled if not organic)
2 sprigs mint
1 inch peeled ginger
Juice all the produce alternating between fruits and veggies. Whisk juice together and enjoy!
