I am obsessed with this versatile granola. First off, you don’t have to bake it, so all the enzymes, minerals, and healing properties of the raw honey are maintained. Second, its chock FULL of superfoods. Raw sunflower seeds, goji berries, chia seeds, raw almond butter, cinnamon, I love it! Third, it’s versatile – you can eat it like cereal where there are all these marvelous clusters of goodness:

This recipe is my interpretation of this recipe for no bake granola. I replaced the peanut butter with almond butter. The maple syrup with a mixture of raw honey and water. I threw in some sunflower seeds for crunch. The result is complete delicious.
Heat up 1/4 cup of water until just about to boil, set aside and let it cool for a minute. Add the raw honey to a large bowl, and whisk in the water, a tablespoon at a time until the consistency of the mixture is like maple syrup. Add the rest of the ingredients to a bowl and stir until the mixture is thoroughly coated in the almond butter and raw honey mixture. In a 9×9 pan, firmly press the mixture to the mold of the pan. Put the mixture in the fridge for 2 hours to let the flavors combine. Then break up the pieces into chunks and eat like cereal.
For granola bars
Put the mixture in the freezer overnight. Then use a sharp knife to cut into bars. Wrap each bar in plastic wrap and store for later.
If raw is not your thing
Bake at 350° for 15-20 minutes until golden brown. Break up the pieces and eat immediately.
This granola in any form will keep up to a week in the fridge.
