My husband loves ice cream. Really loves it. It doesn’t help that there’s an unbelievable home made ice cream shop around the corner from our apartment which beckons to us every time we walk our dog. Last summer, to my muffin top ‘s delight, we probably got ice cream 2-3 times per week.
When we made a commitment to eat better, we knew that we had to cut down on those frequent trips. In my experience, there’s a healthy version of every unhealthy food, it just may take a bit of effort to find it. I wanted to create a dessert that was delicious, refreshing, and close to ice cream, but still good for us.
My friend Rebecca told us about this neat trick for making plain old bananas into ice cream. All you need is a freezer and a hand blender. There’s something about the texture of the frozen bananas that is creamy, smooth, and very reminiscent of ice cream It’s amazingly delicious.
Optional Ingredients for flavor (use any combination you’d like)
1 teaspoon vanilla extract (I love Simply Organic Vanilla Extract )
1/4 cup crushed walnuts
a dash of cinnamon
1 tablespoon cacao powder
1/2 tablespoon of raw honey
1/2 tablespoon of almond butter
Slice the bananas into 1/2 inch slices. Place slices into a freezer bag or airtight container and put in the freezer for 3 hours or until frozen. With a hand blender, blend the bananas together. It might take some elbow grease, but they will lighten in color and look creamy once blended. Mix in any flavorings desired and replace the mixture in the freezer in an airtight container and freeze for at least one hour. Top with seasonal fruit and/or nuts (we used blueberries and walnuts)!
