I was tasting some samples at a gourmet food store and I came across an artichoke spread that was so unbelievably delicious. At $8 for a very small jar, there was no way I was going to buy it so I looked at the ingredients to see if I could try to recreate it at home. I was in luck. The ingredients listed were: artichokes, olive oil, sea salt, garlic, and pepper.
I went home an experimented with the food processor and struck gold. I love love LOVE this artichoke dip. It’s delicious, it’s made with pantry items, and it’s multi-functional. I use it as a dip, a spread, and a mayo substitute in chicken salad, potato salad, and salmon salad. Add a tablespoon if it to some oil and vinegar and it makes the perfect flavorful salad dressing. As a former mayo addict, this spread has been a godsend.
1 clove garlic
1 can artichoke hearts
1/2 cup olive oil
salt and pepper to taste
Drain and rinse artichoke hearts and add them to the food processor with garlic, salt, and pepper. Process and stream in olive oil until the desired consistency is reached. Serve with chips or in any recipe instead of mayonnaise. Enjoy!
