I’m always trying to think of fun desserts that don’t require flour or sugar – not an easy task! I had some leftover coconut cream from an earlier recipe and thought that it would be perfect for a mousse type dessert. This is the perfect indulgence for chocolate lovers who prefer to avoid processed ingredients.
1 cup coconut cream
1/3 cup cacao powder
1 1/2 tablespoons raw honey
1/4 teaspoon vanilla extract
Add all of the ingredients into a large bowl. Using a hand mixer on the highest speed, mix the ingredients together until the mixture becomes light and fluffy (5-10 minutes). Spoon the mixture into serving bowls and freeze for 30 minutes before serving.
