Foodie friday: mackerel pâté.

This is a delicious recipe that comes straight from my mamas kitchen! It's dairy free and, dependent on what you serve it with, gluten free too - so good for all you ladies on an endo friendly diet. 

The layer of butter isn't necessary - you can make it without this, but, it's nice to have a little butter on top for when you spread it. You can use a dairy free butter substitute if you so wish. 

It's lovely as a light lunch or for a little snack. We like to serve it with poppy and sesame crackers but it's down to your own preferences really. It goes nicely with thick crusty toasted bread too. 

The recipe makes four ramekins of pâté which you can freeze - just leave them to defrost overnight in the fridge when you need them.

Mackerel pâté.

Makes 4 ramekins.

(all ingredients are approximate measures and more down to your own personal taste)

3-4 fillets smokes mackerel
half desert spoon horseradish
half desert spoon mayonnaise
juice of half a lemon

  • Warm the mackerel in hot water for few minutes and then break into pieces.

  • Add horseradish, mayonnaise and lemon juice, and then taste. Blend to a smooth (ish) consistency.
