Easy Low Calorie, Low Carb Summer Recipe

Here is an easy outside grill recipe that is low calorie and low carb and most importantly can be prepared in 15 minutes.

Grilled Salmon With Pineapple Salsa

Salsa:

1 cup chopped fresh pineapple
2 tablespoons finely chopped red onion
2 tablespoons chopped cilantro
1 tablespoon rice vinegar
1/8 teaspoon ground red pepper

Low Calorie Cooking spray
4 (6-ounce) salmon fillets (about 1/2-inch thick)
1/2 teaspoon salt

Combine first 5 ingredients for the Salsa (through pepper) in a bowl; set aside. Pre-heat grill and spray with cooking spray. Sprinkle fish with salt. Cook fish 4 minutes on each side or until it flakes easily when tested with a fork. Top with salsa.

Serving size: 6 oz. Calories: 294, carbs 6g, protein 36.5 g
