Training

For a Monday, today was actually a pretty good day. This even includes work - I'm training a couple of coworkers in some of my job functions in order to free some of my time to learn new things. I love learning new things at work - it keeps things interesting and expands my job knowledge.

My dinner tonight was so good! I cooked up some whole wheat spaghetti and topped it with a veggie mixture.



It doesn't look that great, but trust me, it was good. I sauteed a bunch of veggies - tomato, zucchini, onion, eggplant, mushrooms - in some garlic and italian seasoning. I added a serving of Morningstar Crumbles, cooking until heated. Finally, I stirred in some Ricotta cheese until everything was all mixed up.



Served with a side of oven roasted green beans, this made a lot.

I have a lot of eggplant left, so I already have plans for this again later in the week. I think I'll use it as a filling for stuffed eggplant, though.

I got in a great 30 minute run tonight with minimal struggles. Dare I say this running thing is getting easier?
