I am glad to announce that I have conquered Overnight Oats, for you who may not know "Overnight Oats" is a method of preparing oats without cooking. You add liquid and oats and refrigerate overnight. I'm not sure where this originated but I first saw it on Kath's site. I first tried this method of oats last year and I LOATHED it. It tasted like raw dough to me (and not the delicious Chocolate Chip kind) but I didn't give up and last night I conquered.
I usually eat my oats prepared with Chia seeds,fat free milk, and banana (once again, thank you Kath for introducing me to the banana...what a world of difference) so why have I not made my overnight oats this way!? I swear some things are just so obvious...I started by putting a 1/2 cup oats in a container, along with 1/2 cup fat free milk, one (4oz.) container of Fiber One Yogurt (you can use any kind but this was all I had in the house) palm full of Chia seeds and thinly sliced Banana...just like with hot oats, THE BANANA IS KEY! I was pleasantly surprised in the morning when I opened the container and saw this creamy mixture with specs of seeds throughout.
It smelled good, but I was cautious it would taste like wet mushy cardboard. NOPE! it was amazing! The vanilla yogurt made it taste like frosting : ) I'm glad I finally figured out a recipe that works for me. Now the experimenting can begin! pumpkin oats? I hear the can of Libby's calling me now!! This morning I topped it a blob of Sunflower Butter and one of my daughter's 100 calorie graham swirl cookie things...I had one happy belly for 5 hours! I don't know if it was because they were cold but they held my hunger back a lot longer.
