Luckily, it didn't start snowing until about mid morning as I was driving home from my Weight Watcher's meeting. My weigh in wasn't as bad as I expected - I gained a little under 2 pounds since before Christmas. Considering the pure amount of crap I ate for a month, I think I got off pretty easy. Next weekend, I fully expect to see a loss.
Driving in the snow is something I still haven't gotten used to. It scares me and I tend to go very slowly. I've been watching people come and go from the parking lot today - 1. why are they going anywhere, and 2. why are they going so fast?
To make matters worse, I realized a little too late that I don't own a shovel. D'oh! Guess who was out there "shoveling" with a Rubbermaid container. Of course I waited until it got dark to do this. Yes, I'm a doofus, and I fully own up to it!
I ate breakfast in stages today. I had a banana after my meeting and a Berry Bran muffin when I got home.
The nutritionals for this are actually pretty good, so I didn't feel bad about having the whole thing.
After some cleaning and internet-ing, lunch was made. I really didn't know what I wanted to eat and probably took a good 10 minutes looking around my small kitchen for inspiration.
What I came up with wasn't original, but it was good - a chickpea/tuna/veggie salad with Kashi crackers.
With 2 clementines and coffee - I was cold!
Dinner was courtesy of the crock pot tonight -
This was pretty much an open the can and dump it in recipe.
4 - 4oz chicken breast
1 can of corn, juice and all
1 can of black beans, rinsed and drained
1 jar of salsa
Seasonings: Adobo, cumin, chili powder
Place the chicken in the bottom of the crock pot. Sprinkle with spices (I didn't measure these out), and add the corn, black beans, and salsa. Cook on low for about 7 hours and enjoy!
It ended up being a little more liquidy than I would have liked, but overall, not bad. I seved it over some rice and had a nice salad on the side.
So, needless today, it was a lazy, stay in my sweatpants kinda day. I did make a batch of steel cut oats for breakfast next week. I also did a lot of reading - I need to finish my book club book by next weekend and I'm really behind. I think I'm gonna go read some more before I pop in a DVD. Have a great night!
