For dinner tonight, I made a meal that's been floating around in my head for a couple of weeks. I've scheduled it for dinner a few times, but finally made it tonight.
It started with an ounce of chicken breast, carrots, zucchini, onion, and pineapple chunks sauteed in canola oil. I would usually use a cooking spray, but I'm making an effort to get in healthy oils this week as part of WW's good health guidelines.
I added 2 tbsp Asian Sesame salad dressing,
rice noodles, and mixed everything together.
I also made a broccoli slaw salad with some chopped apple and Catalina salad dressing.
I love the contrast of the sweet apple with the broccoli slaw.
I ran tonight after work for 35 minutes on a new to me trail around a beautiful lake. With the upcoming time change, I'm searching for trails and runner friendly areas I can go to right after work. I'd like to avoid the treadmill if I can, and running right after work will allow me to still run outside before it gets dark.
