Well, it's day 2 of February Fury... How many of you guys bake when you're home bound due to bad weather? My girls and I had a great time baking up some banana bread and zucchini bread yesterday as we watched the snow fall. Oh - and it's STILL coming down! Just a few more pics

We made some Zamazing Zucchini Bread yesterday that I want to share with you! Its delicious, and easily adaptable - you could add nuts, or some flaxseed meal and it would still be yummy! We added some dark chocolate chips to yesterday's batch. This is my own recipe, adapted from a bunch of other recipes to make it healthier and tastier! Enjoy!
Jenn's Zamazing Zucchini Bread
1 1/2 cups all-purpose flour 1 1/2 cups whole wheat flour 1 tsp salt 1 tsp baking soda 1 tsp baking powder 3 tsps ground cinnamon 3 eggs 1/2 cup vegetable oil 1/2 cup unsweetened applesauce 1 cup white sugar 1 cup brown sugar 4 cups grated zucchini (about 3 large zucchini)
Grease and flour two 8 x 4 inch loaf pans. Preheat oven to 325 degrees F.
Sift flours, salt, baking powder, baking soda and cinnamon together in a bowl. Set aside.
Beat eggs, oil, applesauce, and sugars together in a large bowl. Add sifted ingredients to the creamed mixture, and beat well. Stir in zucchini until well combined. Pour batter into prepared pans.
Bake for 40 to 60 minutes, or until a toothpick inserted into the center comes out clean. Cool in pan on rack for 20 minutes. Remove from pan and cool completely.
