Someone posted this recipe on the GDT and I thought I would give it a try.
FIBER COOKIES Serves 9@ 1 pt *I was suspicious of this, and when I ran this through the recipe builder with the Hershey bar I used, it was 2 points per cookie*
1 Hershey Bar (regular size) 1 cup All Bran Cereal 2 tbsp. reduced fat PB
Put Hershey bar and PB in a pot on low heat. Stir constantly until chocolate & PB are completely melted. Take off burner and mix in the cereal. Put on a plate covered with wax paper & divide into 9 servings. Put in fridge & they will quickly harden. These should be kept in fridge.PS: I used a spoon to drop on the wax paper but next time, I will try an ice cream scoop so the cookie will stick more together.
Tip: Use an ice cream scoop to try to get the correct portions to make 9 cookies. These are not huge, but satisfying.
So, I must say these do not look overly appealing, but they were very delish and they definitely got DBF's approval. For 2 points, they are crunchy, very chocolaty-peanut butter tasting and you are getting an easy dose of fibre intake with the AllBran.
