YUM-O! This was really really tastey and it's 4 points per serving. I used it as the main event and served it with fresh steamed green beans and a side salad with homemade honey mustard dressing. I used fresh broccoli rather than frozen and I happened to pick up dried mushrooms a few weeks ago and had them in my cupboard (weird, I know). I think any combination of veggies substituted in this recipe would work (i.e. peppers, onions and mushrooms would be so great).
I also sprinkled a bit of fresh grated Parmesan cheese on top for an extra taste. I'm having leftovers for lunch!
