So, it's Tuesday, but it feels like Monday, right? We had a fun day with the kids yesterday - they enjoyed bowling a lot, and the weather was a balmy 45 degrees!

Today's recipe is a version of one I saw on another blog. Marisa at Loser for Life (formerly Trim The Fat), always posts such delicious looking food, and frequently shares her recipes with her readers. One that caught my eye was for a "Banana Walnut Breakfast Cookie". It was the word cookie that really captured my attention.
If you've been reading my blog for oh, about 2 days, you'll know that I have a "thing" for cookies. Just search for the word "cookies" on my blog, and you'll see I mention them at least twice a week. I LOVE them, but they HATE my butt, lol!
So when I saw a chance to have cookies - HEALTHY cookies - for breakfast, well - how could I say no?
I made a couple of minor changes: 1. I doubled the recipe. 2. I added 42 Ghiradelli milk chocolate chips. 3. I made the portions smaller - my double batch made 20 cookies at 100 calories each.
My version contains 3.4 g of fat, 2.8 g of fiber, and 3.3 g of protein for each cookie.
These things are good, man! They are chewy, slightly sweet and perfect for holding my PB2 peanut butter. I think they may just replace my Vitatops for breakfast (sorry, Vitalicious!). A batch of 20 cookies will last me 10 days, so I only have to make these every once in a while. I definitely recommend them!
