I did something a little adventurous on Tuesday night. My local Whole Foods was hosting a free Raw Foods class, and I went. I’ll apologize in advance because I forgot my camera! But I wanted to take pictures so I could share the experience with you guys, so I ended up using my cell phone!

First let me say that I haven’t eaten many “raw” food dishes in my life, and I’ve definitely never prepared any raw dishes. I was a little skeptical, especially when I got to class and I found out that the chef was preparing raw chili cheese fries.
The class was led by Chef Stacey Dougan , who works at the Wynn Hotel here in Las Vegas. Steve Wynn who’s the owner of several hotels on the strip recently became a Vegan. Stacey was asked to cook a vegan meal for Mr. Wynn and his guests for New Year’s Eve. He loved her food so much, that after the event she was asked to create dishes for the hotels restaurants on a regular basis.
During class Stacey made raw chili cheese fries, and a raw strawberry Vanilla milkshake.
And here’s the finished product:
The Raw Chili and Cheese Sauce were served over raw jicama which had been cut and seasoned with olive oil, garlic, chili and onion powder.
Let me just mention again, that I was a little skeptical going in to the class, but when I tasted this dish…WOW! It was super delicious! I was really surprised by how much I liked it! Now I’m not going 100% raw tomorrow or anything, but I’d definitely be open to re-creating this dish at home!

Pumpkin Seed Chili
11/2 cups pumpkin seeds
1/4 cup sundried tomatoes (soaked in water)
2 tbsp. chili powder
1/2 tsp. cumin
1/4 cup dates (soaked in water)
2 cloves of garlic (minced)
1 pinch seas salt
1 pinch cayenne pepper
Water to blend (from soaked sundried tomatoes)
Instructions :Add all ingredients, except water, in to a food processor and blend. Add water and continue to blend until mixture is smooth.
Raw Cheddar Cheese Spread
2 cups macadamia nuts, pine nuts, or cashews (soaked in rejuvelac or water)
1 tbsp. nutritional yeast
1/2 tsp. Tumeric
2 tbsp. fresh lemon juice
2 cloves of garlic
2 cups of water to blend (from soaked nuts)
Sea salt to taste
Instructions: Place all ingredients in the blender or food processor. Initially only add 1 cup of water. Blend. Add 2nd cup of water and continue to blend until mixture is smooth
