Rainy Day Pumpkin Spice Muffins with Brown Sugar and Oat Crumble

Ava had her first ever school field trip this morning! I was proud they took them to a local Orchard, Brown's Orchard . The weather was pretty crappy but the kids didn't mind, they were so happy to see all the pumpkins and stomping in the rain! The kids were so excited to learn about the different foods and where they come from. They were even able to pick apples, nothing like picking your snack fresh from the tree.
I don't know what it is about rainy days but it gets me in a cooking mood! I promised Ava we would make Pumpkin muffins this week and I knew today was the best day for them. After all she did learn about pumpkins today! The recipe comes courtesy of Roni , I have been using this simple recipe for almost 3 years now. There are so many variations you can do with this recipe, it only calls for three ingredients and is low fat and packed with vitamins from the pumpkin. 1 box Duncan Hines Spice Cake Box Mix
1 15 oz. can of Pumpkin
2 egg whites
I know it calls for boxed cake mix but in a pinch this recipe turns a artery clogging dessert into something packed with vitamins. It's great for parties or gifts, try adding dried cranberries for Thanksgiving or my favorite ( which I did today) mix Brown Sugar, Old Fashioned Oats, 1 Tbsp butter (yes, please use the real thing. A little goes a long way) mix with hands and sprinkle over the muffins.
