So any of you goat cheese lovers out there, I've found your next new love! These are individually portioned blocks of cream cheese spread with goat cheese. They taste like goat cheese only creamier and easier to spread. Each portion is only 60 calories and goes quite a long way. But it does have 6g fat which isn't awesome, but sparingly isn't a problem. You can also buy these as just regular cream cheese, but I think these goat cheese ones are worth mentioning. They are made by the same company that makes the Laughing Cow cheese and can be found right next to that. I was never a fan of goat cheese per se, but for some reason I keep trying to love it (just like the oatmeal). So tonight for supper, I decided to follow Amy's lead from a delicious looking recipe she made a while ago and stuffed a chicken breast with roasted red pepper, 1 cube of the above cheese, some spinach leaves and some fresh basil leaves. I coated it in a bread mixture of ground up Fibre 1 cereal, ground flax meal, light grated parmesan cheese, rye bread crumbs and fresh ground pepper. This would have been fabulous baked in the oven, but I got a new BBQ on the weekend was anxious to grill up some polenta I made yesterday, so I popped it on the BBQ instead and it was devine! Seeeeeeeeeee:
Oh and I finally got to use those awesome little silicone elastic bands that I bought a while ago which worked amazingly well, so if you every see some, pick them up, they are perfect for this type of thing. They kept the goat cheese from seeping out!
