Tonights dinner was straight out of The Christmas Story, but with a modern healthy twist. We're coming to end of the week and groceries around here are getting scarce. What I did have was a pound of ground turkey and 1 and 1/2 sweet potatoes. Ah Ha! tonight was going to be meatloaf and mashed sweet potatos with a side of peas! The meatloaf was pretty simple with some quick oats, 1 egg, some italian seasonings, garlic powder and a little salt. If you have anyone in your family who doesn't like sweet potatos you have to try this trick! My husband HATES the thought of ingesting a sweet potato so this is what I do, mix white and sweet potatoes together! genius!
I had leftover mashed white potatos from earlier in the week so I did was mix the white with the sweet and added some salt, reduced fat sour cream and butter. If you think you don't like sweet potatos try them savory instead of sweet. I actually prefer them this way.
The result is this wonderfully creamy bowl of mashed potatoes that are high in fiber and have a really pretty light orange color. Seriously give it a try, it's a great way to get more fiber into some picky eaters (my 3 yr old even loved them!)
