MIL is on her way home - I assume this means she's okay.
She is, however, dealing with a lack of protein (protein malnutrition). The doctors have asked her to increase her intake of protein. You'll note - she eats nearly NO animal source protein, other than an occasional egg or deli meat on a salad. She eats very little actual food to begin with - fills up on many useless calories, like in the form of sugar-free ice cream, and lots of crackers and cheese.
She has tried the occasional protein bar as a supplement, but it has never been a more than once a day or every few days habit, and she hates protein shakes now. She asked my DH about unflavored protein powder, and I mentioned Unjury - which can be added to nearly anything - though I haven't ever tried it.
She's going to have to really kick up her food intake and get healthy - or she's never going to heal.
