On this lovely Friday though I thought I’d share a recipe inspired by Elvis (hold the bacon). One of my favorite pre-race/pre-workout breakfast is toast topped with peanut butter and banana so I figured why not make that into Peanut Butter Chocolate Chip Banana Bread!
My new favorite peanut butter is PB Crave which has flavors like Cookie Nookie, Choco Choco, and Neal’s favorite, Coco Bananas. With the idea of making peanut butter banana bread I just knew Coco Bananas was the way to go! PB Crave also uses Mel-O honey to sweeten its nut butters, cutting the sugar down to 3-5 grams per serving. Not bad for a flavored nut butter!
1/3 cup vanilla Greek yogurt (I used vanilla Chobani)
1/3 cup PB Crave Coco Bananas
3 tablespoons butter, melted (you can use 3 TBSP of apple sauce instead if you’d like)
2 large eggs
1/2 cup granulated sugar
1/2 cup brown sugar
1 1/2 cups all-purpose flour
3/4 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/8 teaspoon ground allspice
1/2 bag of semi-sweet chocolate chips
To start, preheat your oven to 350 degrees. Next, in a large bowl, whisk together the mashed bananas, Greek yogurt, peanut butter, and melted butter. To that mixture whisk in the eggs, white sugar, and brown sugar. You will want to blend the mixture until the sugars have been fully dissolved.
Next, add the dry ingredients to the wet ingredients (flour, baking soda, salt, ground cinnamon and ground allspice). Fold the mixture together until the flour is well combined. You do not need to over stir, just combine until flour is incorporated. Lastly add in the chocolate chips and then pour the batter into a greased 9×5 inch loaf pan.
Cook the bread for 65-85 minutes or until a skewer inserted into the center of the loaf comes out clean. My bread took the full 85 minutes to cook but it turned out perfect!
This bread is the perfect combination of bananas, creamy peanut butter, and semi-sweet chocolate. Comfort through and through!
