One of my goals in 2009 is to try at least 1 new recipe a week. I have so many wonderful, healthy, lowfat/low-cal cookbooks, and I’m looking forward to trying out a bunch of new meals.
This recipe came from WW.com. Since the weather has been cold lately, I’ve been really into making soup in the crock pot. I love the crock pot because you don’t have to do too much prep, and it just cooks in the background while you do whatever else you need to during the day.
WW Slow Cooker Lentil Soup
Nutrition Info: Since this recipe came from WW, it didn’t give a breakdown of the calories, fat, fiber, etc., but it comes out to 4 points 1 1/2 cup serving. Although with the additions I made, it comes out to 6 points per 1 1/2 cup serving, which is still really low for a dinner. This recipe makes 8 servings.
For this recipe, you’ll need the following ingredients:
8 cups canned chicken broth 1/4 tsp black pepper 1/2 tsp salt 1/2 tsp dried thyme (I used fresh lemon thyme that my sister gave me) 3 bay leaves 2 cups dry lentils 2 medium garlic cloves (I added 5 since I like garlic) 1 medium onion, cut into chunks 2 carrots, cut into chunks 2 ribs celery, cut into chunks
I added: 1 tsp cayenne pepper (I like a little zip to my soups) 4 links of chipotle chicken sausage. I cut each link into 8 pieces. I make sure not to get more than 4 pieces of sausage into each serving I dish out. This adds 2 points per serving.
Place the onion, carrots and celery into the slow cooker. Then add the thyme, garlic, bay leaves, salt, cayenne, and pepper. Next, add lentils. Finally, add chicken broth. Stir and set slow cooker on low for 6 hours.
While it’s cooking, go out and get some exercise, take in a movie, clean the house, or do anything else you’ve been meaning to do - you’ve got 6 hours - enjoy it!
After 6 hours, remove lid and add chicken sausage.
Cook an additional 30 minutes.
The finished soup is delicious, satisfying, and oh so good for you.
All this goodness for only 6 points!
I like to pair this with a nice salad of romaine, tomatoes, and cucumbers along with a slice of crusty herb slab bread. The perfect meal for a cold winter’s night.
