MealPlan Monday- Healthy- fast Meals for everyone

Here we go ladies and gentlemen! Another week of quick, easy, healthy meals for the whole family!

This week one of the meals I am recommending is not from a recipe site... it's one I made up! And we all LOVED!! Chicken Chili! So here is how you make it! (I am not a great recipe writer- and when I make up a recipe- I just throw it together- so try it... play and enjoy!)
  • Sautee onion in bottom of stock pot
  • Add left over chicken and turkey- shredded
  • Add one bottle beer (or lite beer!)
  • Stir until warmed through
  • Add 2-3 cans of diced tomatoes (I used some with chili peppers)
  • Can of corn drained
  • One large jar of salsa
  • Two cans of red beans
  • Season to taste- salt, pepper, cheyenne pepper, paprika, cumin
  • Simmer until flavors are all blended
  • Serve with Corn Bread
  • YUMMY!! (With this one? My boyfriend looked at me and said- "No really? When I met you, I really didn't understand that you can cook! This is good!")
