Prashant & Suzie...

Just like in Lady and the Tramp, Prashant and I ate spaghetti for dinner, but instead of meatballs, we used Tofurky Italian "Sausage."

And instead of making my own sauce, I went the semi-homemade route and used a jarred one.

I added some extras to make the sauce even better! I sauteed onions, red bell pepper and minced garlic in a little bit of olive oil. Then, I added a splash of wine and let it simmer until all the liquid had evaporated. Next, I sprinkled a bunch of red pepper flakes to give it a little kick!

In goes the sauce, followed by fresh basil and the "sausage."

I served the sauce over a mix of whole wheat and regular spaghetti. I didn't have enough whole wheat for both of us, so luckily I had another package of the white stuff. Our dinner turned out wonderfully. I think I'll be buying this sauce again... I don't know if it's just that good or if all the "doctoring" made it better, but I like it! Soo glad there were leftovers for lunch today!!

I slept in a little this morning- a whole 10 minutes longer. It was okay though because I was way ahead of the game. Before bed last night, I made sure my clothes were ironed and laid out, my lunch was packed and my hair was washed. It felt so good to have extra time for lounging around and relaxing this morning... I even had time to make myself a cup of decaf tea (w/soy milk & agave).

I also enjoyed some toast with crunchy peanut butter, jelly and bananas on top!

It was a great morning!

For lunch, I ate some leftover spaghetti and a couple of Cuties. Oh yeah, the sauce was even better today!

Thank you for all the dinner suggestions yesterday. Prashant requested black bean soup for dinner tonight, so I'll honor his request, but I'll keep your ideas in mind for Thursday and Friday. :)
