is it true that if i eat a lot of fibre, all the starch and carbohydrates will not be absorbed?

No, it is not true. Some types of fiber are absorbed but those which are not , do not interfer with the absorption of carbohydrates. And fiber is good for you . But go slow on increasing it in your diet. Otherwise you might feel bloated. Vegetables and fruits with skin are good sources of fiber as are whole grains such as brown rice and whole wheat bread. Potato skins from a well baked potato are real treats.
