I wasn’t going to blog while on vacay, but this omelette was too yummy not to. Avocado, spinach, a bit of mozzarella and tomato. Along with some fruit, one piece of bacon and a few potatoes. I literally was halfway done and said, “Wait! Wait! I’m going to blog this!”
