It's one more day closer to the weekend and I couldn't be more happy. It has been a long week! I normally stay up until 10:30 or 11, but not this week. This week I've been hitting the hay by 9:15-9:30. I feel like I'm getting so old because I just can't "hang" like I used to. I've always been more of a morning person anyway though and that's when I feel most energized and productive. Plus, there is something really beautiful and peaceful about waking up when the rest of the city is still asleep.
I'm a little behind so I'm going to start with dinner from Tuesday... For dinner, we cooked yellow curry with tofu and lots of veggies (potatoes, bell pepper, squash, onions and bok choy). It was our first time making yellow curry at home, so we used a jar of yellow curry sauce from TJ's to help us out and then we doctored it up to make it exactly the way we like it. It turned out pretty well for our first try! I ate everything you see here plus another spoonful. Yum, yum! ![]() For breakfast on Wednesday, I ate toast with pb & j with slices of banana on top. And then for lunch, I ate leftover yellow curry over rice and an apple for dessert. My mid-morning snack... ![]() During morning break, I walked outside to the coffee cart to get this super tasty gingerbread latte with nonfat milk. I forgot to order it decaf so I was buzzin' for the rest of the afternoon! I only drank 1/2 of it before throwing it away. ![]() I love the holiday flavors! Next flavor on my list: white peppermint mocha... For dinner I made a huge salad with romaine, cucumbers, bell pepper, garbanzo beans, 1 Quorn "chicken" cutlet and honey mustard dressing. While chopping the veggies for the salad I ate a bowl of Pirate's Booty... Argh Maties!!! ![]() Breakfast this morning... ![]() Sorry for a short blog post, but I'm hungry and dinner is waiting for me in the kitchen. Prashant cooked beans and rice with.... it smells so good! Plus, I already wrote this post once (which was much longer) but then lost my internet connection, which then caused my computer to act a little crazy trying to re-establish a connection. Ugh, so frustrating! Oh, well... things happen, right? Have a great night! |
