The Mack truck hit me this morning again, right about the time the alarm went off to get up. My coffee maker beeped that it was ready right at the same time, so that was the bright moment that sprung me up outta bed! There was no hesitation on my cuppa Joe this morning! I’m ashamed at how much our weekend in Toronto kicked my ass! *sigh* I’m still young I swear!! Right?? Right??????!!!!
After getting out of the shower and ready for work, I promptly got busy on making a Green Monster for Breakfast. This time around I decided to add some frozen strawberries to the usual combo and I replaced the almond butter with organic crunchy peanut butter (which btw gave it a really nice extra punch for some reason). I was surprised that adding like 5 strawberries would force me to add more almond milk, but I had to because it was so thick! I ended up with two travel mugs this morning of GM! It was the best GM I’ve made so far to date though I have to say. The combo was:
As expected I was good to go until around lunch time and I was happy to wait because I had the most amazing Lunch!
An Ezekiel hamburger bun with some mixed greens and a small salmon tail fillet with a drizzle of Simply Natural Goddess dressing and a side of cherries and blackberries. It was sooooooo satisfying and delicious!
I had no need for any afternoon coffee at all, so I didn’t go there. Instead I made a trip to Planet Organic to pick up a few things I needed. I always end up getting more than I had planned, but I couldn’t help it because if something’s on sale and it’s a staple, I’m for sure going to buy it. Eden Organic had pasta sauce and diced tomatoes on sale, and if you’re trying to buy organic most of the time, catching items on sale is key! I also bought cashew butter which I have never tried before but I LOVE cashews so I have no idea why I hadn’t tried it. Turns out it’s the friggin BOMB! I tasted it and it was creamier and I seemed to like it better than almond butter! I friggin love all things nut butter anyways, so it’s a guaranteed winner in my books pretty much no matter what.
Last night before bed I cut up a juicy ripe peach and mixed it up in some Liberte No Fat Probiotic Svelte Plain Yogurt and by the time this afternoon came around it tasted like peach flavoured yogurt and it was delicious. I still can’t believe that I now eat plain yogurt and I know I say that a lot, but it blows me away. Do you know how many tubs of plain yogurt have gone to waste in my fridge over the years?? Probably, because it’s probably the same story with you isn’t it? ;-)
Supper was roasted Brussels sprouts (in EVOO, balsamic, S&P), roasted garlic broccoli, sprinkled with a few pine nuts and fresh parmesan reggiano (the only way to make broccoli by the way, none of that steamed crap in my house :-D) and a few slices of grilled pork tenderloin. Okay and hubby wanted pizza, so I had to have a small smidgen of a slice:
