Gluten Free, Sugar Free Chocolate Chip Cookies - A treat without the guilt
3 / 4 cup natural sweetener such as fructose or Xylitol (It will tell you on the packet if you need to adjust the measurements.)
1/2 cup butter, Soya butter, or margarine, depending on what your dietary needs are
1 teaspoon vanilla
3/4 cup white or brown rice flour
1/4 cup soy flour
1/2 teaspoon baking soda
1/2 teaspoon salt
170 grams of raw chocolate chips, which is filled with antioxidants and energy
If you can't find raw chocolate, you can use 85% dark chocolate.
Cream the butter in a large mixing bowl until very soft. Add the sugar, salt and vanilla and mix well. Add the egg and mix well. Preheat oven to 175 Celsius. Mix in the dry ingredients. Stir in the chocolate chips. Drop by SMALL teaspoons on lightly greased cookie sheets and bake 8 - 10 minutes (watch carefully). Cool on pan briefly and carefully remove to a cooling rack.
