i have celiac disease and numerous food allergies, the most significant of which are dairy and eggs. i am developing insulin resistance and must loose 50 lbs. my dr . has recommended a diet w/ 50 grms of carbs or less per day and 1200 cal. i do not usually eat large quantites of animal protein and it seems this is the only thing i can eat and keep the carbs low while getting enough protein as whey and eggs are not an option. i usually eat beans , tofu etc... i am willing to change as necessary but am feeling very lost in all this. i have consulted w/ 2 nutritionists, $60.00 each who were useless due to the food allergies! i am so glad to have any advice you may be able to provide. thanks, estelle..
