Feeling Green

Hey everyone! Happy Humpday!

I did a little shopping yesterday. I went to the mall to return something….yeah, we know how that goes. The Hubs is NEVER excited when I have to “return” something because he knows that the item being returned will magically turn into two (or three) NEW items. But Express had an amazing sale: $15 tanks and $10 tees. Hello? They were practically GIVING them to me. So I left with these adorable basics:

Total for all 3 = $35.00

$25.00 for THREE tops? Yes, please! I felt like I was shoplifting. I was waiting for someone to come running after me as I walked out of the store. I love a good bargain, especially in one of my favorite stores. American Eagle needs to bring it…

With all of that shopping, I’m so happy that I had some solid fuel in my belly to keep me energized and focused. Hey – shopping is a serious sport. It takes skill and patience. And a good, healthy meal is a must for a successful shopping trip. The LAST thing you need is a growling tummy to pull you off to the food court and make you waste precious shopping time. Priorities, people.

So I kept on keepin’ on with my Dough Boy Oats. Only this time, I added a special ingredient to the mix.

Hmmmm...what could it be?

Can you guess what I added? Yep, SPINACH! Oh, stop – it is NOT yucky. Not only does it add calcium, vitamins K and C, iron, and fiber (among other things), it makes the oats a pretty green color. And you absolutely cannot taste it.

Now, I LOVE spinach. I often eat it as the base to a salad, on wraps or sandwiches, and as a “bed” to many dishes. But I really don’t want to TASTE spinach in a bowl of sweet, doughy oatmeal. I do, however, want that extra boost and I’m willing to “go green” to get it.

Green Dough Boy Oats (inspired by Kath’s Dough Boy Smoothie)

  • 1/2 cup + 1/4 cup raw oats
  • 1 cup unsweetened vanilla almond milk
  • 1/2 scoop vanilla protein powder (I use Sun Warrior)
  • 1/2 banana
  • 1 TBSP chia seeds
  • splash of maple syrup
  • 1/4 cup frozen organic spinach
  • splash of vanilla extract

Directions: Prep your oats the night before. Into your bowl, add 1/2 cup oats, chia seeds, protein powder, and salt and mix well. Add the almond milk, banana, spinach, maple syrup, and vanilla and mix. Let it sit in the refrigerator overnight. This is what it will look like the next morning:

Empty the mixture (it will be extremely thick) into your blender and add the remaining 1/4 cup of oats and a splash of almond milk. Blend it all together and oogle over your green bowl o’ goodness:

Kermit would be so jealous. Top it as you wish. I used some Blueberry Coconut Maple Granola and a few walnuts.
