Coconut Flour Waffles and reminiscing

You guys really cracked me up with the dimple comments yesterday. :mrgreen:

So yes, we did wake up to more snow.  I almost thought about curling into a ball on the floor, but then I realized it was only 3 or 4 inches and starting to turn to rain.  I can deal with that.

So – it was time for breakfast first.  Next installment of foodie play time? Coconut flour waffles!  These are yet another permutation of the protein pancakes/waffles .  However – do *not* make pancakes out of these.  The batter is too delicate and makes a mess.  I tried that and it didn’t work.  Still tasted good, though.


  • 1 egg
  • 2 tbsp (14 g) coconut flour
  • 1/4 tsp baking powder
  • bunch of cinnamon (I never measure)
  • 1/3 cup of cottage cheese
  • sweetener of choice if desired

Preheat waffle iron. Put everything into a mini blender, food processor, or use an immersion blender.

Blend up.  It should look creamy and be still liquidy.  If you have small eggs, you might need a touch of water.

Spray the waffle iron with nonstick spray (do not skip this). Pour batter  into heated waffle iron and let it cook.   Now this batter is delicate, so you will want to cook it a little longer so that it won’t stick to the grid and pull apart.  I opened mine too soon and it stuck a little, so  I let it cook a little longer and I was able to use a fork to help release the waffle (phew).

These are soft waffles, not crispy.  They are folded in half here.  I wonder if adding a little oil to the batter would crisp them up?

Very light and tasty. Gluten free and grain free. Stats for the whole batch (serves 1) without toppings and using 1% cottage cheese

Calories:  197, fat 7 g, carbs 16 g, fiber 6 g (!!!), protein 13 g.

After shoveling this morning, I took a few pictures.  I kind of got into a giggling fit seeing the enormous piles of snow.  Not sure if that is a little insanity peeking out or what.

Let’s just reminisce, though – how about that? (Okay, now Little River Band instead of The Who)

I am just going to look at the 2nd set a few times and look forward to that!

I then hopped on the bike trainer for another quick ride.  I did 8 miles in 31 minutes.  Yep – booking along!  It’s like if I can pedal faster I can melt the snow :D .

Slow work today.  I have a new job on the horizon in the same field, which is a really good thing – I hope, although I am not crazy about the new schedule.  I start training on their platform at the end of the month.

Dinner bell is ringing!

I am out of the magic rolls, so just the pork burger tonight.  And that is an apple there on the side.  Most readers know I don’t eat apples that often, preferring pears, but that is what is left for fruit in the house.  John eats a lot of apples and the rare pear.  I eat a lot of pears and the rare apple.  Opposites attract, right?

I’ve got work tonight.  I have an almond snack set aside for tonight to have with some decaf coffee and almond milk.  It’s a nutty kind of night :D
