Clean Eating Day 1

I posted about how scared I was to get started this morning…but the day went very well!

I’ll do a quick run down of what I ate:


  • 1 cup of cooked oatmeal
  • 1 sliced banana
  • 1 Tbs. natural cashew butter
  • 1 cup of skim milk


  • Coffee with homemade creamer and Stevia
  • Fage 0% with 1 tsp. of honey, 1 Tbs. chia seeds, and 1/4 cup of pineapple
  • WW string cheese
  • 1/2 oz. almonds (I bought this at an Amish community—they are roasted in something but not sure what—a very light coating of something?)


  • Leftover ham and veggie soup
  • 1/2 cup of fresh strawberries


  • 2 clementines
  • 1/2 cup cherry tomatoes
  • 1 cup of baby carrots


  • egg white omelet with mozzarella cheese and turkey—topped with homemade salsa
  • kale chips
  • A BIG HUGE GLASS of water with fresh lime juice
  • dessert: Fage 0% mixed with cocoa powder, honey, and vanilla.

After all of this eating, I have 6 points + left over for the day.

Planned evening snack:

  • homemade hot cocoa made with water and stevia—this is 0 points +!
  • popcorn—natural and plain.

I also drank A TON of water throughout the day. No pop for me. It’s banned completely for now.


  • I ate a whole lotta dairy today! It just kind of happened that way…but I suppose I should watch that? Is there any danger to eating too much dairy?
  • I found myself thinking about sweets a lot throughout the day. But I was fine. Addicted a bit?
  • The dessert that I made and the hot cocoa are not as sweet as most packaged products are. This will take some getting used to—but they don’t taste bad either!
  • My coffee creamer is a bit weak. My co-worker is gluten intolerant and has a stash of xantham gum—she’s going to give me some to add to my creamer and see what that does.

Overall feeling today: Excited!

I am really excited about this. It doesn’t feel like a diet at all, yet I am not eating the foods that aren’t good for me. What I love about today is that everything I am eating is GUILT FREE. This is huge for me. I have a lot of guilt centered around food.

Of note:

  • I need to cook up some whole grains to have on hand! I missed bread today and I think I could satisfy those cravings with whole grains.
  • I thought I would have to go without a sweet treat on Valentine’s Day—But Staci reminded me that there are options! I’ve picked out a clean dessert recipe to enjoy with hubby…who will be home on Valentine’s Day! Thanks Staci!

Questions that arose that I need to research:

  1. How is honey or stevia different than sugar? I know it’s less processed, but how does it affect the body differently?
  2. Are there health benefits to unsweetened cocoa powder?

That’s day one!
