Breakfast X 2

As always, I woke up before Prashant this morning, so I made myself a little pre-breakfast snack to tide me over until he woke up. I'm lovin' this 3 seed bread my hubby brought home from Mother's last week. I slathered the last of my Crofter's Superfruit spread on it, making it even more delicious. I also ate the last of the tangerines... 2 more items added to the grocery list for tomorrow.

I was ready for a real breakfast by the time Prashant woke up. I tried to make an omelet in our cast iron pan but failed. It would have turned out much better had I used more oil, but I didn't so my omelet turned into a scramble instead. It actually turned out quite well, surprisingly. I used last night's leftover fajita ingredients (tofu, bell pepper, scallions, zucchini and squash) to make the eggs and then topped them with lots of salsa. I also made breakfast potatoes with added bell pepper, onion, cajun seasoning, garlic powder and pepper.

It has been several hours since breakfast and I'm still not hungry. It's probably a good thing that I haven't eaten anything else because Prashant and I are going out to dinner with his parent's in a couple of hours. Hopefully, I'll be good and hungry by then.

Not much else on the agenda this afternoon. I finished all of my domestic duties yesterday so that I could finally have a full day off from everything! I didn't even exercise today... I got tired just watching Prashant sprint the stairs from the street down to the beach and then back up (from our balcony- I didn't even go downstairs). I'm a total slacker today and I love it!
