Breakfast of Champions-or stressed out pregnant women that need a hearty meal

Those are the infamous words of the toddler around 2pm. She is at that age that she loves to be mommy's helper, which is great esp. with a newborn on the way. I try to bake something at least twice a week with her, It's great time for us to share together and she loves to count the eggs we'll need and how many scoops of flour that goes into the recipe. I know these will be memories that she will carry on to share with her kids one day. That being said, we made homemade chocolate chip cookies : ) The house smelled AMAZING! The recipe is simple and came courtesy of the "I Can't Believe It's Not Butter" box : )


1 c. butter ( 2 sticks)

3/4 c. firmly packed brown sugar

1/4 c. white sugar

1 egg

1 tsp. vanilla extract

1/2 tsp. baking soda

2 c. all purpose flour

1 package of chocolate chips ( The recipe called for semi-sweet but I only had milk chocolate- which worked just as well and wasn't overly sweet)

Preheat oven to 375°.
Beat I Can't Believe It's Not Butter sticks with sugars in large bowl with electric mixer or wooden spoon until smooth. Beat in vanilla, egg and baking soda. Stir in flour until blended. Stir in chips. Drop mixture by heaping tablespoonfuls, 2 inches apart, on ungreased baking sheets. Bake 10 minutes or until edges are golden.

I really like the base of this recipe, it's not overly sweet and the cooking time was timed perfectly. I can't leave well enough alone so I'll be experimenting with different add-ins next time : P
