Boys oh Boys

Psssssst! I got a little somethin' up my sleeve for our winner of the BLBE challange, but I'm keeping my lips sealed for now. Maybe you know already and if you do, shhhhhhhhhh :-D teeheehee

I had "old faithful" for Breakfast this morning with a little something special with it :-) I made a delicious bowl of banana oats with toasted almonds and a "side" of Chocolate PB2 and the whole thing was only 5.5 POINTS:-) Today's combo was:

  • 1/3 organic oats
  • 1/2 medium banana, chunked (I keep them in the freezer and always have it on hand)
  • 1/2c Unsweetened Vanilla Almond Breeze
  • 1/2c water
  • pinch of salt
  • 1.5 tbsp ground flax meal
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 8g toasted sliced almonds, "extra crispy" today, whoops!
  • 2 tbsp Chocolate PB2
My morning coffee with blend cream and sugar free cinnamon dolce syrup was 1 more POINT:

I am really pleased with the addition of the Chocolate PB2. [ insert my previous raving enthusiasm here ] I've eliminated the Splenda Brown Sugar that I used to add for a little extra sweetness, I've eliminated the walnuts because the almonds do the job on their own and now I've eliminated the chocolate chips! When I reach the stage of maintenance, I'll be happy to add some more nuts and toppings when I can afford some more calories in the run of a day, or when I'm back in business on the exercise front when these antibiotics kick some sinus infection butt, but for now, this does the job mighty fine to take care of my "oatmeal fix" :-D

I had to get in some dairy today, so for Lunch I had some Raspberry Liberte No Fat Probiotic Svelte Yogurt and instead of mucking it up with the cool whip which I have refrained from doing as of late, I mixed in some Chocolate PB2 in there! I only used 1 tbsp which is half of a serving. Who the heck doesn't like chocolate and raspberries??? Tell me, who???

*Sound the crickets* :-D

I topped it all with some fresh organic raspberries (which costed me a mint btw *sigh* I hate that, like fresh raspberries aren't expensive enough?) and I pretty sure I don't need to sound the trumpets again over how fantastic this combo was, do I? 'enough said :-D To go with it, I had a serving of baba ganouj and a serving of the Blue Menu White Bean and Grilled Red Pepper dip with some Blue Menu Ancient Grains snack crackers (10 for 1 POINT ). These crackers are made with quinoa, spelt, millet and kamut (sounds healthy to me!) I just lurrrrrrrve babaganouj (more than hummus even) and this incredibly healthy and well-balanced meal was 6.5 POINTS:

I didn't actually end up eating all of the baba gannouj and the bean dip, but I counted it as if I did anyway.

I had to have another "cream-filled cake" for a Snack this afternoon, so I split another PB2 Chocolate Chip Muffin in half, warmed it and filled it with a half serving of Chocolate PB2 (1 tbsp) annnnnd.........get this: a sliced up mini chiquita banana to put in the middle too! Isn't that the cutest thing ya ever saw??!

This was about 3 POINTS I'd say:

The muffin would only hold about half of the banana slices, so I just ate the rest separately.

Who needs saturated fat-ridden, refined sugar pumped xmas cookies with stuff like this around?!

I seem to have gained a little more confidence in my list of "intimidating veggies" category lately. I've created a "I aint 'fraid a no veggie" category on my blog tags. So far, I've conquered:
  • Swiss Chard
  • Leeks
  • Bok Choy
Okay "conquered" might be an overstatement, but I've tried them and eaten the whole bunch and I didn't let it go bad in the fridge and actually enjoyed them, so I decided to be adventurous with a new vegetable that I've decided I'm no longer afraid of trying - brussels sprouts. That's right, I'm a badass :-D Like brussels sprouts are intimidating right? lol And you better look out because I bought some collard greens that'll be appearing on the menu tomorrow likely :-D

I googled it and decided to try out this recipe and thought the balsamic and pine nuts sounded right up my alley even though the thought of "brussels sprouts" didn't.

And to go with it was another fantastic star of the show all on its own with a special condiment that I found at the grocery store last night at Sobeys, "Cranberry & Pomegranate Brie Topping" Huh? Wha? Where? I know, right! And it's only 20 calories for 2 tbsp! I found it in the deli section in the case where they put all of the dips and hummus and deli meats. I feel like I'm overloading you all with all of these fantastic finds lately, but I just can't help it!

I thought to myself, "What would go great with a sweet brie & cranberry-like topping?" An extra-lean ground turkey burger OF COURSE, no?! So that's what I made. I mixed up my leftover sweet bell peppers and mushrooms and some cilantro and an egg white and some oatmeal to form patties and grilled it on the grill pan. I garnished it with some light organic sour cream, the cranberry pom brie topping and stuffed some fresh spinach in there too. Okay I'm sick of going on about how awesome everything is lately, so I'll just say try it *wink wink*. The entire meal was 6.5 POINTS with a healthy hearty whole wheat bun (toasted of course):

And I gotta say I am a major fan of this brussels sprout recipe. I've never really tried them any other way before, but the balsamic vinaiger gives them a nice sweet glaze and it was delicious.
After that I snactched the last snowball from hubby before they were all gone :-D All in all my day was a total of 25POINTS.
Oh and I can't believe that I keep forgetting to mention this, but I now "sort of" officially a size 10 :-D I wore those Size 10 Calvin Klein pants I bought at Cosco a month or so ago and they fit comfortably now even after they were washed and dried. And since then, I've bought a pair of Gap dress pants, size 10 and the two pairs of paints I bought at Banana Republic were also size 10 :-) I'm still working on making them a "better fit" but still! Yay!
