Berry Cream Cheese Crepes with Maple Almond Drizzle (and Giveaway Winner!)

Happy Monday friends! We have a GORGEOUS week ahead of us here in North Carolina – warm temps and sunny skies. Mommy likes. :) Maybe I’ll get some sun this week and can put away my tan in a can.

I thought I would give you a little recap of my Mother’s Day. First, I want to thank the Hubs, who spent a large majority of the day cleaning the house. He cleaned the bathrooms, vacuumed, and cleaned the kitchen. It’s always nice to NOT have to clean. I foresee a maid in my future…here’s to wishful thinking!

And that was my favorite gift. Anything from him is my favorite because it means the most. :) The Hubs gave me a gift certificate for a pedicure. And since it is sandal season, I am MUY thankful. My feet are in desperate need of a little TLC, so I’m looking forward to it. And speaking of my “tan in a can”, he also bought me two more bottles:

I’ve NEVER been a self-tanner lover. It always turned me orange or left me looking like a tiger. I would end up with patches and streaks that took any of the “natural looking tan” component out of the equation. I stumbled upon Sun Laboratories one day and started watching video reviews. I figured I would give it a try and I’m still hooked. I’ve been using it for over a year. It is seriously AMAZING. It’s very easy to apply, dries instantly, and leaves a very natural color. It only comes in one shade – ultra dark – but don’t let that scare you. The color level depends on how heavily you spray it on. I just spray a light mist and the color is fabulous. It did take me a couple of applications to really master the art of applying it, but now it’s effortless and perfect every time. If you decide to try it, here are my tips:

1) Exfoliate well before applying

2) Put vaseline (or lotion) on your nail beds, around the bottoms of your feet, AND lightly on the tops of your feet.

3) Spray it on in the shower. Then all you have to do is spray the residue away. Much easier than having to wipe it off of the floor. Trust me. I know.

4) Buy one of these:

It’s a self-tanner application mitt. They cost 4.00 at Ulta and make application a breeze. After you spray on the color, just use the mitt to rub it in evenly. Remember to glide the mitt over your hands and the tops of your feet to ensure even coverage.

There – now that I’ve give you an unexpected and unplanned self-tanner tutorial, you should be on your way to a gorgeous summery glow. I applied it about an hour before taking this pic:

The color is great – seriously. And if you think I look like and Oompa Loompa, please don’t tell me. Cuz that would just be mean.


Onto the Mother’s Day Eats: The Hubs offered to make me breakfast this morning, but I already had my heart set on making crepes. I saw a recipe on livingmintgreen and it looked easy so I decided to go for it. I then came up with a berry cream cheese filling that was perfect!

Berry Cream Cheese Crepes with Maple Almond Drizzle

For the crepes (as seen on livingmintgreen)

1/4 cup Whole Wheat Pastry Flour

1/2 cup Unsweetened Vanilla Almond Milk

1 egg

1/2 tsp vanilla

For the filling:

3/4 cup berries of your choice – I used strawberries, blueberries, and blackberries

2 oz reduced fat cream cheese

2 TBSP Vanilla Organic Yogurt

For the drizzle:

1/4 cup pure maple syrup

1/4 cup almonds

1/8 cup almond milk

Directions: To make the crepes, just combine the ingredients and mix well. Pour a thin layer into a non-stick heated skillet. Carefully flip it when it starts to set. Cook both sides until they are a light golden brown.

Ooh, la la

To make the filling, just blend everything in the blender until it is smooth and creamy.

To make the maple almond drizzle, put the almonds into your blender and pulse until they are finely chopped. Add the remaining ingredients and pulse until it is well combined.

Then assemble your crepes! First, add some fresh fruit.

I used blacks and blues

Then, top the fruit with the berry cream cheese filling.

Smother that fruit

Fold it over and add the maple almond drizzle over the top.

These were goooooooood! They were simple to make, easy to assemble, and so delicious. The Hubs especially loved the berry cream cheese filling. My fave is the maple almond drizzle.  I am not ashamed to admit that I poured the remaining maple almond drizzle into my mouth (straight from the blendtec). So good! I’ve also used this drizzle on pancakes and waffles. It’s TO DIE FOR!! Try it!
