Today was pretty great. Not because I did anything out of the ordinary or anything really exciting — in fact, I spent the majority of the day sitting behind this laptop working on various projects. The cool part was, I got to do it all in Atlanta at my parents’ house while hanging out with my dad. He had the day off and we sat in the living room, him catching up on some light reading, me catching up on emails, all while simultaneously watching and discussing the CSI marathon on Spike TV. (I’m a sucker for crime scene/murder mystery shows.)
My mom got home around 5pm and the two of us did a little shopping, stopping quickly beforehand for dinner at Piccadilly. I haven’t been there in years, but I was jonesing for some southern-style veggies so I was happy to go. For my entree, I ordered the Mediterranean Fish and was surprisingly inspired to recreate this at home. The fish was more solid than say, tilapia – though a fish that light would probably work. The fish itself was lightly seasoned and then covered with a tomato based soup consisting of stewed tomatoes and green and black olives. I don’t typically care for green olives, but the combination was quite good.
For my veggies, I chose green beans and turnip greens and on the side, a stick of cornbread. Finally, even though we probably didn’t need it, we split a slice of sugar-free cheesecake. Why skip dessert tho? Life is worth celebrating and cheesecake is delicious!
