Thank you everyone for the advice and support left on my previous post. When I woke up this morning, the embarassment hit me right away. I was like, "oh crap, did I really write what I think I wrote last night?" But, after going through the comments, I felt a lot better. It's a good thing to let it all out every once in a while, I guess. I'm going to try and follow Cammy and Mep's advice this week: focus on getting one thing done at a time.
I used to think that weight loss would solve all my problems, but obviously it doesn't work that way...Life can still be a real pain in the ass sometimes. Anyway, here are some creations from my kitchen that I have been wanting to post for some time...
Over the weekend, I decided to hop on my magic cloud and fly over to Asia with my cooking tools. During my journey, I visited China, Korea, and Japan.
In Beijing, you will find street vendors selling many pan-fried bread goods. When I lived there, I would always stop and get a few pieces for breakfast. They were extremely affortable and tasty, especially with a glass of warm soybean milk. One of my absolute favorites is the green scallion pancake. It's basically pan-fried dough with green onions inside. Simple and so delicious! I made a batch of these on Saturday morning using a recipe from Appetite for China.
First, I made the dough. It took me two tries because I had no clue how to use yeast, like, at all. I also didn't understand the implications of an extremely sticky dough.
I cut the dough into small squares, and then took forever rolling them into flat pancake shapes. I topped each of the pancakes with scallions and a sprinkle of salt.
I pan-fried a couple just to try them out and froze the rest for later. Breakfast for the next week :).
Yummy! Tastes just like the ones my grandma makes.
For dinner on Friday, I made okonomiyaki, which is basically a type of Japanese pizza or pancake. The pizza is made up of mostly cabbage, leeks (first time trying these), and flour. Toppings? Whatever you want, just like the pizza you and I both love to binge on. The recipe I used can be located at 101 cookbooks.
I mixed the leeks, cabbage, flour and eggs together in a big bowl.
I then pan-fried it, giving the pizza an unusual, yet intriguing color.
Last, but not least, I topped the semi-burnt pizza with almonds and chives. I can say with absolute confidence now that leeks are wonderfully delish. I'll definitely be making okonomiyaki again in the future.
One final dish I made over the weekend was a Korean one called Tak Toritang. It's a soy sauce based chicken and potato dish with LOTS of veggies. I think anything tastes good if you cook it in soy sauce lol. You can find the recipe here.
Obviously, I've got a thing or two to learn about presentation. I'm very good at burning food though!
