Hi, Iâ??m Diana. Iâ??m not a nutritionist, a chef, or even a very good cook for that matter. Iâ??m just a twenty-something Chicago-area girl-next-door trying to cook up a quick meal after work, or looking for a low-key restaurant to meet-up with my friends on the weekend. Oh, and Iâ??ve also been an ovo-lacto vegetarian for over 10 years. I donâ??t eat meat, fish or seafood. I do eat eggs & dairy, but have been trying to incorporate more vegan substitutes into my diet (hello, creamed Cashews!). I live with my wonderful boyfriend, Mike. Heâ??s not a vegetarian, but thankfully heâ??s an adventurous eater and will pretty much eat anything I cook, including all sorts of meat substitutes and attempts at multi-cultural foods. We are pretty adventurous both in terms of places we go and things we eat. When we arenâ??t traveling, we love to explore Chicagoâ??s best hole-in-the-wall restaurants, ethnic grocery stores, all-natural emporiums and occasionally the fine dining scene. Iâ??m also always on the look-out for easy, healthy recipes with lots of flavor. I hope to be an approachable source for information on vegetarian recipes, restaurants, and products whether you are completely vegetarian, or simply looking to incorporate more meatless meals into your diet.
