If you are looking for a quality non-soy meat substitute, I highly recommend Quorn brand chicken products, especially the tenders and grillers (which are like chicken breasts). They are non-soy, and are actually made from mushroom. They are really healthy, and taste great. I pop a breast in the oven with a little margarine and some spices, then steam veggies as a side, and that's dinner! Quorn isn't sold everywhere, though. If you live in the East Bay, Berkeley Bowl carries it, as does Whole Foods.
